Hábitos de consumo, percepções e conhecimento sobre lúpulo entre consumidores de cerveja em Santa Catarina, Brasil

Resumo

No Brasil, o mercado de cervejas artesanais vem se expandindo, sobretudo para atender à demanda por produtos diferenciados. Nesse contexto, a produção de cervejas lupuladas tem aumentado para suprir esse segmento. Diante da valorização de atributos de qualidade e diferenciação, este estudo teve como objetivo avaliar os hábitos de consumo, as percepções e o nível de conhecimento de consumidores de cerveja em Santa Catarina, com ênfase em ingredientes e em cervejas lupuladas. Para isso, aplicou-se um questionário online estruturado, respondido por 252 participantes. A cerveja foi a bebida favorita mais citada (n = 185). A análise de correspondência indicou associação entre a frequência de consumo de bebidas alcoólicas e a bebida favorita, com agrupamento das frequências semanais próximo à cerveja. Observou-se também associação entre a frequência de consumo e o nível de conhecimento/engajamento, com consumo de duas a três vezes por semana associado a participantes que interagem com conteúdo relacionado à cerveja. A maioria dos participantes afirmou saber o que é lúpulo (n = 218). Além disso, 87% relataram conhecer e já ter consumido India Pale Ale. Em relação a cervejas produzidas com lúpulo em cone, 81 participantes declararam já ter consumido, enquanto 101 não tinham certeza; entre os que não consumiram ou estavam incertos, 98% manifestaram interesse em experimentar. Após breve explicação sobre benefícios sensoriais, 48% indicaram disposição a pagar mais. Em conjunto, os resultados sugerem que maior envolvimento com a categoria e valorização dos ingredientes se associam a padrões de consumo mais regulares. Esses achados oferecem subsídios para a indústria cervejeira no desenvolvimento de produtos, na rotulagem e no posicionamento de mercado. O elevado interesse em experimentar cervejas elaboradas com lúpulo em cone (98%), somado à disposição a pagar mais manifestada por 48% dos participantes após a comunicação dos benefícios sensoriais, evidencia uma oportunidade de mercado para esse segmento.
